Easy Bircher Muesli

Bircher muesli, or overnight oats are quick, creamy and delicious. They can be made in so many different flavours that you could eat it every day and never get bored of it. Here I present to you a creamy, cinnamon-y, sweet bircher muesli which is the perfect taste for a cold winters morning. Thank me later.

I pre-prepared a whole massive batch of oats with various nuts, seeds and dried fruits, but you can easily add these in separately. Depending on how much you like to eat for breakfast, add 1-2 cups of jumbo or rolled oats and a variety of nuts and seeds. I love cashews, almonds, hazelnuts, toasted coconut chips, sunflower seeds and Brazil nuts. For sweetness, add dried mango, banana or apple chips and raisins.

Grate half an apple. Save the other half for dessert or tomorrows morning snack. You can peel it if you prefer.

Add about half a cup of almond milk or any other plant milk of your choice. I don’t really measure out my milk- it should just be enough to cover the whole thing. Mix in the grated apple and add 2 tsp of cinnamon, 1tsp of ginger and about 2 pinches of turmeric. Obviously the amounts will vary- I LOVE cinnamon and spices in general but some people don’t like as much.

Add a tablespoon of nut butter. I really really recommend almond butter to get the creaminess and the delicate taste.

This part is really up to you and where it gets fun: the toppings! I topped mine with half a banana which is really good for sweetness and texture.

Then I added some blueberries as they are full of antioxidants, great for sweetness and also add some colour!

And…. voila! The finished product. I finished it off with some coconut flakes and some chia seeds, and left it in the fridge overnight.

I ate it for breakfast this morning and it is simply marvellous! Hope you enjoy it as much as I did. Lots of love, Elena xx
